Ingredients

- 2 cups diced potatoes
- 1 cup diced bell peppers
- 1 cup diced onions
- 1 cup spinach
- 4 large eggs
- 1 cup low-fat milk
- 1 cup shredded low-fat cheese
- Salt to taste
- Pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, mix the diced potatoes, bell peppers, onions, and spinach.
- In another bowl, whisk together the eggs, milk, salt, and pepper.
- Combine the vegetable mixture with the egg mixture.
- Pour the mixture into a greased baking dish.
- Top with shredded cheese.
- Bake for 30-35 minutes or until the eggs are set.
- Let it cool for a few minutes before serving.
Notes
- Feel free to add other vegetables.
- Store leftovers in the refrigerator for up to 3 days.
- This can be made ahead and frozen for convenience.
