Ingredients

  • 2 cups water
  • 3 carrots, sliced
  • 2 potatoes, diced
  • 1 onion, chopped

  • 2 tablespoons tomato paste
  • 1 teaspoon thyme
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. Heat a large pot over medium heat.
  2. Add beef and brown on all sides.
  3. Add onion and garlic, sauté until soft.
  4. Stir in tomato paste, thyme, bay leaf, salt, and pepper.
  5. Add beef broth and water, bring to a boil.
  6. Add carrots and potatoes, reduce heat to low.
  7. Cover and simmer for 1.5 to 2 hours.
  8. Remove bay leaf before serving.
