Ingredients

Instructions

  1. Soak the beans overnight in water.
  2. In a large pot, heat olive oil over medium heat.
  3. Add onion, carrots, and celery. Cook until softened.
  4. Add garlic and cook for 1 minute.
  5. Add soaked beans, vegetable broth, diced tomatoes, cumin, paprika, salt, and pepper.
  6. Bring to a boil, then reduce heat and simmer for 1-2 hours until beans are tender.
  7. Blend some of the soup for a creamy texture, if desired.
  8. Serve hot with bread or toppings of your choice.
