Ingredients

- 2 cups dried beans (your choice)
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 6 cups vegetable broth
- 1 can diced tomatoes
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Soak the beans overnight in water.
- In a large pot, heat olive oil over medium heat.
- Add onion, carrots, and celery. Cook until softened.
- Add garlic and cook for 1 minute.
- Add soaked beans, vegetable broth, diced tomatoes, cumin, paprika, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 1-2 hours until beans are tender.
- Blend some of the soup for a creamy texture, if desired.
- Serve hot with bread or toppings of your choice.
Notes
- You can use canned beans for a quicker option.
- Adjust spices to your taste.
- Store leftovers in the fridge for up to 5 days.
