Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • 4 cups bone broth
  • 1 cup sweet potatoes, cubed
  • 2 cups kale, chopped
  • Salt to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery. Sauté for 5 minutes.
  3. Stir in garlic, thyme, and rosemary. Cook for another 2 minutes.
  4. Add bone broth and sweet potatoes. Bring to a boil.
  5. Reduce heat and simmer for 20 minutes or until sweet potatoes are tender.
  6. Add kale and cook for an additional 5 minutes.
  7. Season with salt to taste and serve hot.

Notes

  • Store leftovers in an airtight container in the refrigerator.
