Description
A collection of nourishing AIP soups and stews that are free from common allergens.
Ingredients
Scale
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 teaspoon thyme
- 1 teaspoon rosemary
- 4 cups bone broth
- 1 cup sweet potatoes, cubed
- 2 cups kale, chopped
- Salt to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery. Sauté for 5 minutes.
- Stir in garlic, thyme, and rosemary. Cook for another 2 minutes.
- Add bone broth and sweet potatoes. Bring to a boil.
- Reduce heat and simmer for 20 minutes or until sweet potatoes are tender.
- Add kale and cook for an additional 5 minutes.
- Season with salt to taste and serve hot.
Notes
- Store leftovers in an airtight container in the refrigerator.
- This soup freezes well for future meals.
- Feel free to add your favorite AIP-friendly vegetables.
