- 2 pounds of meat (beef, chicken, or lamb)
- 1 large onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons ginger, grated
- 3 tomatoes, diced
- 2 cups vegetable broth
- 1 tablespoon curry powder
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups mixed vegetables (carrots, potatoes, peas)
- 2 tablespoons vegetable oil
Instructions
- Heat oil in a large pot over medium heat.
- Add onions and sauté until translucent.
- Stir in garlic and ginger, cooking for 1-2 minutes.
- Add meat and brown on all sides.
- Mix in tomatoes, broth, curry powder, paprika, salt, and pepper.
- Bring to a boil, then reduce heat to low.
- Cover and simmer for 1-1.5 hours, or until meat is tender.
- Add mixed vegetables and cook for an additional 20 minutes.
- Serve hot with rice or bread.
Notes
- Adjust spices to your taste.
- For a thicker stew, blend a portion of the vegetables.
