  • 2 tablespoons vegetable oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 tomatoes, chopped
  • 4 cups broth or water
  • 2 cups leafy greens (spinach, kale)
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon paprika
  • 1 tablespoon ground peanuts (optional)

Instructions

  1. Heat the oil in a large pot over medium heat.
  2. Add the chopped onion and sauté until translucent.
  3. Stir in garlic and ginger, cooking for 1 minute.
  4. Add the meat and brown on all sides.
  5. Mix in the tomatoes and cook until soft.
  6. Pour in the broth or water and bring to a boil.
  7. Reduce heat and simmer for 30 minutes.
  8. Add leafy greens and cook for an additional 10 minutes.
  9. Season with salt, pepper, and paprika.
  10. Stir in ground peanuts if using and serve hot.
