Ingredients

- 1 pound meat (beef, chicken, or goat)
- 2 tablespoons vegetable oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon ginger, minced
- 2 tomatoes, chopped
- 4 cups broth or water
- 2 cups leafy greens (spinach, kale)
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 teaspoon paprika
- 1 tablespoon ground peanuts (optional)
Instructions
- Heat the oil in a large pot over medium heat.
- Add the chopped onion and sauté until translucent.
- Stir in garlic and ginger, cooking for 1 minute.
- Add the meat and brown on all sides.
- Mix in the tomatoes and cook until soft.
- Pour in the broth or water and bring to a boil.
- Reduce heat and simmer for 30 minutes.
- Add leafy greens and cook for an additional 10 minutes.
- Season with salt, pepper, and paprika.
- Stir in ground peanuts if using and serve hot.
Notes
- Adjust spices to your taste.
- Serve with rice or bread.
- Can be made vegetarian by omitting meat.
